Role Profile

A large recognised restaurant chain is looking to recruit a Category Controller to lead all day to day aspects of the food purchasing team encompassing all brands, to ensure company strategic and operational objectives are met. Responsibilities include (but not limited to):

* With Head of Buying to support, design and implement the food buying strategy. Challenge and implement market leading purchasing strategies.
* In the Head of Buying absence assume responsibility for the total buying team
* Responsible for managing food inflation, through negotiation and new sourcing opportunities.
* Manage the commercial relationships with suppliers.
* Mange food buyers ensuring a constant development programme is embraced.
* Be involved in new menu development process
* Revenue and food cost budgeting required
* Advise the business on key food developments; macro-economic and environmental risk factors and new product and process developments
* Chair and manage the monthly divisional food meetings with operations

Skills and Experiences

* Food purchasing experience, various categories, preferably within foodservice / wholesale environment.
* In depth knowledge of protein or produce purchasing
* Preferably CIPS qualified.
* Multiple person team management experience at senior level.
* Strong negotiation skills.
* Proven track record of strategic purchasing / category management.
* Self-driven for personal development.
* Flexible, willing to learn and able to work within a fast moving and demanding environment the jobholder will need excellent organisational and communication skills as they will be communicating, influencing and reporting to all parts of our businesses, including company Directors.
* Strategic and problem solver.
* People skills - Ability to lead, influence and coach others. Direct team and cross - functional.
* Strong communication skills.
* Excellent presentation skills both verbal and written
* Flexible to changing working priorities.
* Confident to challenge standard ways of purchasing.
* Ability to multi-task
* Clearly defined project management skills
* Minimum 5 years' experience.
